Roasted vegetables with cranberries

1 head cauliflower sliced and cut into fourths
1 large red onion, cut into fourths and layers separated
1-2 tablespoons olive oil
1 1/2 cup fresh cranberries
Salt
1/4 cup balsamic vinegar
1/4 cup honey
1/4 teaspoon freshly cracked pepper

Preheat oven to 450 degrees. Spray baking pan with non stick spray. Spread cauliflower and onion in pan.  Drizzle with olive oil (I like to use Misto, a spray device available for $10 at Bed, Bath and Beyond.  It allows you to spray on oil and decrease the fat in recipes).  Salt and stir. Bake for 15 minutes.  Stir in cranberries and bake another 10 minutes.

While that is baking, mix vinegar and honey in a small saucepan.  Simmer uncovered for 10 minutes.  When you remove the cauliflower from the oven pour this mixture over it and stir.  Grind a small amount of pepper over the vegetables.

Great served with potatoes or brown rice.
